Have a Delicious Summer with this Spicy Citrus Pork Salad Recipe

When the weather is warm, you probably don’t want to heat up your kitchen fixing dinner. Turn to this main course salad to make a satisfying and easy supper for your family.


For the salad:

1-pound pork tenderloin, cubed

2 teaspoons Cajun seasoning

2 tablespoons olive oil

1 romaine lettuce heart, chopped

1 can mandarin oranges, drained

1 cucumber, seeded and chopped

2 cups shredded coleslaw mix

1/2 cup sliced almonds


For the dressing:

2/3 cup olive oil

1/3 cup balsamic vinegar

1/4 cup chopped cilantro

1 tablespoon lemon juice

1 tablespoon orange juice

Salt and pepper to taste

Coat the pork tenderloin cubes in the Cajun seasoning. Saute pork in the olive oil in a large non-stick pan about 8 to 10 minutes or until cooked through. Let the pork cool. Toss all the ingredients for the salad except the almonds in a large bowl. In a small bowl, combine all the dressing ingredients. Pour the dressing over the salad and toss to combine. Top with the almond slices. Serves 5.
